- 1-1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup butter
- 2-1/4 cups firmly packed brown sugar
- eggs
- 2 teaspoons vanilla extract
- 2 cups coarsely chopped pecans
Sift together flour, baking powder and salt. In a medium saucepan over low heat, melt butter and brown sugar, stirring constantly. Remove from heat.
In a large mixing bowl, slightly beat the eggs and vanilla. Slowly add about 1/2 cup of the hot mixture to the egg mixture, stirring constantly. (This brings the egg temperature up gradually to prevent them from becoming scrambled eggs.) Add remaining hot mixture, 1/2 cup at a time, stirring constantly. Add flour mixture; stir to
combine well. Stir in pecans.
Pour batter into a greased 9×13-inch pan. Bake at 350 degrees for 25 to 30 minutes or until brownies begin to pull away from the sides of the pan. Cool completely.
Note: Never substitute self-rising flour; the mix will overflow the pan into the oven, even if you omit the baking powder and salt.
